Here's what you'll need.
- 1 lb of potato gnocchi
- 1 package of spicy jalapeño chicken sausages
- 1 bag of frozen peas
- 2 lb bag of frozen corn
- salt
- black pepper
- crushed red pepper
- 1 package of cream cheese
- 1 cup light cream
- Dried Garlic Powder/Oregano/Basil
- Arugula**
This is so fast--watch out because if you blink, you'll miss it!
Frist, prepare gnocchi as instructed on package. I brought heavily salted water to a boil, then added gnocchi until they started to float. I then added the frozen veggies to the gnocchi for about 5 minutes before draining most of the water (save about 1-2 cups).
While waiting for gnocchi and veggies, brown your chicken sausages, set aside.
At the same time, you can begin your sauce. Combine light cream, cream cheese, black/red pepper, oregano, basil, and garlic (all to taste, I used about 1-2 teaspoons of each, except the red pepper, I only used a dash or two of that). Stir constantly until smooth.
Cut up your chicken sussages, and then combine all ingredients. Should be slightly "soupy." ENJOY!
**This made enough for my boyfriend and I for 7 meals. =)
**We couldn't find arugula in our grocery store, so we added peas, chicken sausage, and a lot of extra corn to the original recipe.
