Grilled Chicken Pita Pizza

I was a little overwhelmed this week with trying to figure out meals, getting back onto my work schedule, and just with life in general--so I put John in charge of meal planning and grocery shopping (it's hard for me to give up control sometimes, but it turned out better than great!)  

I have to admit I was very skeptical about a pizza recipe that didn't include CHEESE or PIZZA SAUCE--but let me tell you this pizza was AMAZING!  John found this recipe in my new Asylum "Get Shredded" meal planner.  With every Beachbody workout you get, they also supply a customizable meal guide!  Looovvveee their recipes!  




What You'll Need:
4 Tbsp. firm tofu
Dast of garlic powder
Pinch of dried oregano
Pinch of dried basil
Dash of salt
1 tsp. olive oil
1 6-inch whole wheat pita-toasted
1 clove minced garlic
1 plum tomato, thinly sliced**
2 oz. diced grilled chicken breast**
4 fresh whole basil leaves



1.  Preheat oven to 400 degrees.    


2.  Make "tofu ricotta cheese: by mashing tofu, garlic powder, oregano, basil, salt, and olive oil with a fork.



3.  Spread on toasted pita bread and top with minced garlic, tomato, and chicken.  Place on a cookie sheet and bake for 5-6 minutes or until warm.  Top with basil.

              

4.  Enjoy!!  We even packed our extras and they were great the next day for lunch!!
