Tacos

Last week I made a very yummy curry cauliflower soup, but it wasn't a hit with John, so this week when I asked him what he wanted--he came up with tacos.

Tacos?!  Eek, my family was never a taco family, and I had NO idea how to make a healthy one...so I hit the web in search of a way to make one of his favorite meals without the "bell"!


Here's what I came up with...


2 lbs lean ground beef*

1 onion
1 large head of lettuce
1 tomato
1 package of "taco cheese*"
1 medium sized light sour cream*

**For healthier substitutions, you could use ground turkey (we were turkey'd out after Thanksgiving), and either skip the cheese and sour cream of use low-fat greek yogurt or low-fat cheese


Play around here though!!!  Maybe you like different things in your tacos, make it your own!!!  Just so long as you buy fresh--you can't go wrong!!  


So to make these little guys, you just brown the meat with the meat seasoning**, I found this one that worked GREAT, but again play around with it, for some that might be too spicy, for others--perhaps not enough kick--we both liked this though! While it's browning, prep your veggies!  This made enough for the two of us for 3 days, or about...8 -12 tacos.



Meat Seasoning** 


You can add your spices while you're browning your meat, or, if you've already browned your meat, just add a little water and stir it until everything is well mixed.






1        Tbsp. chili powder
1/4     tsp. garlic powder
1/4     tsp. onion powder
1/4     tsp. crushed red pepper
1/2     tsp. paprika
1 1/2  tsps. cumin
1        tsp. sea salt
1/4     tsp. dried oregano
1        tsp. black pepper







I don't know about you--but a taco just isn't a taco without guacamole, this was a simple recipe that I found.  It turned out really great--and was super quick!!!  


Ingredients

4 ripe avocados

Juice of 1 lemon or lime

1 tbsp. garlic powder

1 tbsp. onion powder

1/2 tsp. salt


Now--the real kicker for me with tacos was how to PACK it so we could take it to work!!  Well--John had the great idea to pack everything in little baggies and create taco "kits!"  This kept everything fresh!  We called it an, "adult lunchable" ;)  The lettuce was wrapped in a papertowel that we moistened a smidge with just water, and that worked GREAT.  OH--and that reminds me---no shells.  Not because we forgot, just because we eat mostly gluten free and I just prefer the "taco salad" thing.  But again, customize these to fit your needs!!  =)
